Been running around to cross all the hundreds thousands of to-dos on my list. I am still struggling with the balance between working for myself  and being a mum, wife, friend, and still, have some privacy or “me” time. Of course I will soon find out of it. Many women live like that and do not even have the chance to share with the father of the kid.

Last Sunday we been out for a family brunch. It was so good to realise the time, to measure how long it has been already after we became 3. Mikkel is sitting on restaurant chairs and hanging out with us around amazing food and places. We have been dreaming of how it will be to show him some good beautiful food. Nowhere better for him to start then in Scandinavia.

I love the #scandistyle, a was of doing it they have here in Scandinavia. Elegantly Minimalistic, subtle, sharp and charming. Ok, to go out in restaurants ain’t the most budget choice here in Oslo but there are places like Gråd in Tøyen, Oslo. They make goo and creative food, not too expensive (the ingredients are simple but good) and they make it all super nice. Good service, beautiful venue, cutlery, plates, amazing interior and it is walking distance for us. If you are around, go try it.

Anyways, it was a good day with my family.  A bit colder than I expected but super nice to be out.

I wore this cute look from the spring collection at Lindex. I love that both pieces are from regular line, the Extended. The pieces are sized L. I loved the combination, especially the texture in the sweater and the plissè midi skirt. Midis are pretty, we should wear them more. I am also very pleased to shop my clothes in the same area as the girl who dresses XS. This is future, this is inclusion. #fashionforall

The magic bubbles with SodaStream

My Soda Stream machine is finally here. I can’t begin to tell you how much I am using it. I love sparkling drinks. From simple fizzy water to colorful drinks. Guilty as charged! Here at home we do drink a lot of sparkling water, like, almost everyday, we make non-alcoholic cocktails for “preggo-me” and kids in the family. Hubby is a good sparkling water freak. It seems the bubbles are the only ones that can make him to drink water at all. Crazy, right?

The SodaStream machine has been a savior around here. It stopped the large consumption of bottled sparkling water and increased the amount of water my husband drinks. Like magic. My package came with the machine itself, a bottle of gas and a plastic bottle to make the bubbles in your water. I also got a pack with an extra bottle, with does help when you have guests and two Soda Mix Flavors: berries and cloudy lemonade – perfect for non alcoholic drinks.

The machine looks good, so we placed it on out bar at the dining room. There we can make our drinks and have guests making the water themselves choosing the amount of gas to taste. I like maximum gas for flavored water and 2 for regular sparkling water.

Last week we made two new recipes – a virgin lemonade/mojito and a fizzy berries in mint. Here they are:

First of all, I made the drinks using the flavors that came with my SodaStream machine. All you need to do is mix the flavors to taste and add sliced lemon and mint for the virgin mojito or add sliced berries (I used strawberries) and mint. Ice cubes and voilà. It is super fast and yummy. But I also tried a bit more gourmet version of my alcohol free drinks.

To start with, a simple syrup:

2 part sugar (I used demamera sugar – the syrup turns light brown)

1 part water

  1. Bring the water to a boil.
    Dissolve the sugar into the boiling water, stirring constantly.
    Once the sugar is dissolved completely, remove the pan from the heat. (Note: Do not allow the syrup to boil for too long or the syrup will be too thick once it cools.)
    Allow to cool completely and thicken, then bottle.

For the Virgin Lemonade/Mojito, you need (makes one large glass)

Half a lemon, thinly sliced

Juice of half a lemon

1 tea spoon of syrup (or to taste)

Fresh mint leaves

Ice cubes

Freshly made SodaStream sparkling water

  1. Mix lemon juice and simple syrup
  2. Add some mint leaves squeezing them with your fingers to activate flavor
  3. Add lemon slices and ice cubes
  4. Make your fizzy water (I recommend level 3 for maximum bubbles) and add to the glass
  5. Garnish with mint leaves and serve

For the Fizzy Berries in Mint you need (makes one large glass)

Fresh Berries (I used about 6 Strawberries)

1 coffee spoon of simple syrup (or to taste, remember berries are a bit sweet)

Fresh mint leaves

Ice cubes

Freshly made SodaStream sparkling water

  1. Slightly mash the berries with some of the mint leaves
  2. Add syrup and stir well
  3. Add ice cubes
  4. Fill the glass with your water freshly made with SodaStream and garnish with mint.
